Toast buns lightly on the grill. Fry Onions: Add a tbsp of butter to a skillet on low medium-low heat. Let onions cook until desired doneness (20-25 minutes). Make Cheese Sauce: Shred 1 Cup Cheddar Cheese and 1 Cup Cooper Sharp Cheese. Start a roux by adding 2 tbsp of butter to a small sauce pan, add flour and stir with a whisk. Add your milk and stir until heated up. Slowly add in your Cheddar Cheese & Cooper Sharp Cheese. Mix the cheese sauce until it is smooth and your desired thickness. Add Salt, Pepper and Onion Powder to taste. Assemble: Add the sausage to your buns, followed by your fried onions and lastly your cheese sauce. Try it with a smoked sausage for extra flavor. Great with a cold IPA or amber ale. You could even add beer to the cheese sauce for an extra beer flavor in these.
